The story of our winery.
In the heart of Umbria, in an extraordinary land surrounded by vines and olive trees, our family tends and protects what Nature has so generously given us. On the green Umbrian hills, the products of Azienda Agricola Oleum are born — in one of the most beautiful and unspoiled corners of Italy.
Azienda Agricola Oleum is a family-run estate located in Collazzone, in the province of Perugia. We are dedicated to olive growing and to the production of high-quality extra virgin olive oil — with an attention to detail that translates into very limited productions, made only when the season allows.
Our oil is obtained from olives handpicked and cold-milled within 24 hours of harvest, to preserve all their organoleptic properties. We grow three cultivars — Leccino, Moraiolo and Frantoio — which together give our oil a perfect balance of sweetness, bitterness and spiciness, with fruity notes of fresh herbs and tomato leaves.
In addition to oil, we produce high-quality wines — whites, reds and blends — from hand-harvested grapes, in organic conversion. Seven labels, all I.G.T. Umbria, born from gifted soils and patient winemaking.

Care for the environment and continuously evolving cultivation techniques, combined with constant research: essential elements that build an intrinsic, focused bond with the surrounding nature.
Our olive groves grow on extremely fertile, nutrient-rich soils. We fertilize our plants with organic products. Pruning is carried out from January to March: we remove excess branches, prevent ageing and let air and light reach the canopy — both essential for the tree's health.
We work with care and passion in respect of the environment, to produce a high-quality extra virgin olive oil — and wines that bear witness to the unique excellence of our soils, plants and microclimates.

We are in Collazzone (PG), easily reached from the Ripabianca exit of the E45 motorway. We send precise driving directions upon booking confirmation. Plenty of parking at the cellar.
